Nestled within the historic King Billy Pub in Sneinton, Nottingham, Carolina’s TexMex offers a vibrant fusion of Texan and Mexican flavors, all crafted to be 100% vegan and gluten-free.
Founded by Mark Walsh and Angela Shepherd, the eatery began as a street food venture in 2021 and found its permanent home atop the pub’s rooftop terrace in 2024. The menu boasts a variety of dishes, including jackfruit birria tacos with apple-jalapeño salsa, beer-battered oyster mushroom tacos, and breakfast quesadillas that have garnered a dedicated following. Complementing the food is their signature “Scarlett’s Hot Sauce,” a fiery blend featuring Carolina Reaper and chipotle chilies.
The venue’s cozy, graffiti-adorned setting, combined with its commitment to plant-based and gluten-free offerings, makes it a must-visit for food enthusiasts and their canine companions alike.​
